We sometimes grow beets on the farm (though usually only enough to make a few cases of our own pickled beets to send to farmers’ markets), so we source them from a local farm.
Beet greens can be boiled or steamed and used similarly to spinach. Beets themselves can be steamed, boiled, baked, pickled and eaten in salads. *beet recipes*
